The evaluation organised by the Scottish
Federation of Meat Traders Association, sought products that deviated away from
the Traditional Lorne Sausage to make a square sausage with a difference. In
total Scottish butchers submitted 100 entries for this evaluation held in
September 2010 at Dunfermline. All sorts of complimentary tastes were tried and
catching the judges' eye was Duncan
Fraser's Black and Slice Roulade.
