Haggis
2014 YEAR OF THE HAGGIS AWARDS
The West Lothian butchers have become famous for their pies and meat products so it was no surprise that this Chicken Balmoral was encased in pastry. It was a very special product and a delighted Paul Boyle of Boghall Butchers explained its construction:-
“The chicken was clad around the haggis so that no matter where you cut the round every portion contained a piece of chicken and haggis. The way to do that was to arrange it around the pie in a circle. It had to be moist so I made a sauce that is very similar to a carbonara sauce with onion, mushroom and garlic.”
The award winning product is available from Paul's shops in Boghall and Broxburn as individual pies or as rounds.
The year of celebration was the idea of the Robert Burns World Federation and the product evaluation produced lots of new as well as tried and tested combinations using haggis.
There was something to suit all tastes when 121 products were submitted for evaluation at the City of Glasgow College in August 2014. The full list of winners is as follows:-
