Whenever they can, they use locally grown (Highland) ingredients for their products. All of the soft fruit that they use, the raspberries, strawberries, currants, gooseberries and the rhubarb are grown here in the Highlands, mostly by small growers and crofters all of whom they know personally. They see the fruit growing and the average time from picking to pan or freezer is no more than a few hours. Some of their vegetables such as beetroot are also grown locally: they also use a lot of the wonderful wild fruits and berries – rowan, elderberry and sloe. All of these fruits and vegetables are grown in the fresh Highland air and well away from busy roads of which they have few.�
They plan to use even more locally grown ingredients such as onions, plums, apples and even chillies if they have another hot summer.
Time and great care are taken in the manufacture of our products. All are traditionally hand made in small batches to ensure maximum flavour and quality and all of our products are natural and free from artificial chemical additives, flavouring and preservatives. Their oatcakes and barley biscuits are all wheat free and they are planning a gluten free clootie very soon.
Their quality is reinforced by being accepted for membership of the Scottish Food Guide, the Guild of Fine Food Retailers and Slow Food International. they have also been recognised as Rick Stein Food Heroes, they are part of Henrietta Green's Foodlovers' Britain and they are recommended by � gourmetbritain.com
