Butchers counters and window displays quite often contain approximately 25% low profit/low sale and other non-essential items. Products such as tripe, liver, kidneys, shanks, breast of lamb, dripping, bacon trim, bones and lots more.

Some of these products can be combined into oven ready products and return superb profits. Therefore justifying their presence in the counter and at the same time increasing his premium meat profits by 20-50% plus.

They also use trays far too large and tend to display bulk bargain items en masse. You may well find one or two trays of premium oven ready products will return far greater profits in half the space.
