Trick or Treat Winning Recipes

From the Gold Awards at the recent Trick or Treat Awards, one Halloween and one Bonfire Night product was selected to be marketed by every craft butcher in Scotland, if they so wished. The posters are included in this tube.

There were many good ideas and tasty products in this product evaluation that was staged for the sole purpose of discovering products that could be made and sold under the theme of Halloween and Guy Fawkes. The products that caught the judges' eyes (and taste buds) best, and with the greatest potential for other butchers to make and have success with, were identified as:-

Halloween:-
Ogre's Eyes in Swamp Sauce by Pauls Quality Butchers in Kirkintilloch.

Bonfire Night:-
Catherine Wheels by Scott Brothers in Dundee.

The recipes have been provided by the creators as part of the condition of entry.
(Don't worry they were each given a £500 cheque for their winning idea!)

Ogre's Eyes in Swamp Sauce

Recipe:- Mix a 80ml sachet of Verstegen Sweet Chilli Sauce into 750g of pork sausagemeat and form into 50g balls. Insert a 5g ball of Mexicana cheese into the centre and reform. Into the top of each ball press in a pimento stuffed olive and sell with a 'Swamp Sauce' – this was from Lucas Tomato Sauce mix with 10g of MRC barbecue flavaglaze added. One kilo of made up sauce was enough to accompany 24 Ogre's Eyes.

Ticket said:- £8.50 per kg / £3.86 per lb. contains Pork (60%), sweet chilli sauce colour and preservative. Allergen Advice: contains wheat, gluten, milk.
Cooking Instruction: Oven Bake. Pre-heat oven to 180°C / gas mark 4. Place in an oven proof dish with sauce and cook for 30-35 minutes.
Serving suggestions: serve with penne pasta or spaghetti.[stylist for photograph used curly tube pasta for greater effect]

Catherine Wheels

Recipe:- use Pork Sausages with hint of Sweet Chilli Sauce (optional). Run into 190 Devro skins, cut 6oz lengths and start to ring around a cherry tomato. Tuck ends in at the finish to prevent sausage escaping out the end when cooked and then skewer. Use smaller lengths to create child size versions.
